The weather has been really nice in the past few days in Wales. I pulled a few bottles of champagne from my mimi cellar and most of those have been champagnes. The last one I had was the Bollinger Special Cuvee Non Vintage champagne. Bollinger is one of the few remaining independent family owned champagne houses. According to Bollinger cellar master it taste is reduced to three key aspects, fruit, vinosity and creamy effervescence. The combination of Pinot Noir, Meinier and Chardonnay grape varieties gives this excellent NV champagne a very fine velvety bubbles. The ripe fruits aromas delivers a combination of structure, length and vivacity. It is best paired with shellfish, crab or lobster.Personally my taste buds find it to be truly the fine celebratory drink that I enjoy anytime and anywhere on it own. A wonderful champagne with a combination of velvety bubbles, flavours of pear and spices with a hint of walnuts.
